The Fall temperatures have rolled into Massachusetts along with the earlier sun sets. While some people strongly dislike this change from summer to fall and the anticipation of winter that comes along with it, I happen to think that crisp, fall nights are the best. Maybe these yummy air fryer cookies will help change your mind!

Even if you are on team summer, please indulge me and picture this: you guys get the kids to bed at a reasonable hour, grab a blanket and go sit out under the stars or by a fire with two giant, freshly baked cookies that resulted in minimal dirty dishes. I’m in! You get the mixing bowl and turn on the air fryer.  I’ll go tuck some little feet in….or vice versa. Whatever works.

I call these cookies date night cookies or chubby hubby cookies.

And to be clear, “chubby hubby” has absolutely nothing to do with my husband and everything to do with the flavor of Ice Cream by Ben & Jerry’s.  The cookie combines the flavors of peanut butter, chocolate & pretzels. It has that salty/sweet combination that’s amazing.

So bake a couple of indulgent air fryer cookies for the grown ups and enjoy those Fall nights!

Date Night Air Fryer Cookies

A recipe for 2 giant, decadent cookies to enjoy once you get the kids to bed.
Prep Time 20 minutes
Cook Time 15 minutes

Servings 2

Ingredients
  

  • 2 TBSP butter (room temperature)
  • 2 TBSP peanut butter
  • 1/4 cup sugar
  • 1/4 tsp vanilla
  • 1 egg
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup flour
  • Handful chocolate chips and pretzel pieces

Instructions
 

  • Pre-heat your air fryer to 350 degrees.
  • Mix together the butter and peanut butter in a medium sized bowl.
  • Add the sugar and vanilla and mix until creamed together.
  • Add the egg and stir together.
  • Add the baking powder, salt and flour on top of the butter/sugar/egg mixture.
  • Use a fork to lightly mix the dry ingredients together while they rest on top of the other ingredients.
  • Mix the combined dry ingredients into the wet ingredients until the cookie batter forms.
  • Fold in the pretzel pieces and chocolate chips.
  • Divide the dough in half, shape into 2 large cookies and place on the tray for your air fryer that is prepped with non-stick spray.
  • Chill the uncooked cookies in the freezer for 10 minutes
  • Air fry at 350 for 12-15 minutes. Wait until the cookies are cool enough to touch but still a little bit warm and enjoy!
